Zucchini Nut Delight

Ingredients

  • 4 eggs
  • 500 g brown sugar
  • 250 ml vegetable oil
  • 450 g white flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 600 g garden fresh grated zucchini
  • 250 g ground hazelnuts
  • 1 1/2 teaspoons cinnamon
  • chocolate icing

  1. Blend eggs and sugar.
  2. Add nuts and oil. Mix well.
  3. Combine dry ingredients (flour, baking soda, baking powder, cinnamon) and add to egg mixture. Blend in well.
  4. Add grated zucchini.
  5. Put baking paper on baking tray. Pour mixture on baking tray. Bake at 200 ° C for about 30 - 40 minutes. After cooling cover cake with chocolate glaze. Great for breakfast!
