Jim's Famous Outhouse Bran Muffins

Ingredients

  • 1/2 cup Sugar
  • 1 tablespoon Baking Powder
  • 1/4 teaspoon Salt -OPTIONAL-Jim's Mom used it, but he doesn't
  • 2 cups Bran Cereal
  • 1 1/4 cups Milk
  • 1 1/4 cup Flour
  • 1 Egg
  • 1/4 cup Olive Oil
  • 1 cup Raisins (Holiday Idea: Soak in Brandy)

  1. Mix flour, sugar, baking powder and salt (optional) and put aside.
  2. In large bowl, stir together bran cereal and milk; let stand until cereal softens. Add egg and olive oil; beat. Add the flour mixture, stir until blended -- allow for characteristic lumps (stiring too much makes tough muffins!)Gently fold in raisins.
  3. Pour batter into 6 greased muffin tins (for big muffins!) or 12 greased tins (for short muffins :-)(Use Olive oil instead of butter to grease pans!)
  4. Bake at 450 degrees for about 20 minutes; more for larger muffins, or until golden brown.
  5. Last step? Eat warm with cream cheese... mmmmmm...
