Ingredients

  • 1 Bag Fresh Spinach
  • 3 oz Cream Cheese
  • 1/4 teaspoon nutmeg
  • 1 1/2 cup Shredded Cheddar
  • 6 eggs
  • Parmesan cheese, grated
  • 3 English muffins

  1. Preheat oven to 350 degrees. In a microwave safe bowl, add chopped spinach, cream cheese and nutmeg. Microwave on high for 2 minutes.
  2. Add cheddar and mix well.
  3. Grease 6 medium-sized ramekins and divided spinach mixture between them.
  4. Crack an egg over top of each individual ramekin, and sprinkle with grated parmesan, so egg is covered.
  5. Bake at 350 degrees for 15-20 minutes, or until egg is set on top of each ramekin. Remove from oven and with a spoon, carefully remove contents of each ramekin and put on top of half of a toasted English muffin. Ready to serve! :-)
