Jeanne's cornbread casserole

Ingredients

  • 1 can whole kernel corn
  • 1 can creamed style corn
  • 1 egg
  • 1/2 cup salsa
  • 1/2-3/4 c. sour cream
  • 1 cup shredded cheese
  • 1 box Jiffy cornbread mix
  • 1/4 cup diced green chilies

  1. Mix all the ingredients together by hand in a large bowl; save 1/2 the cheese. Optional ingredient: 1/4-1/2 c. melted butter.
  2. Pour mixture into one or 2 greased baking dishes; put remaining cheese on top.
  3. Bake at 350 degrees for 30 - 40 minutes. Serve hot or at room temperature. Serve as main dish or side dish.
