Heat griddle to about 375F. Combine the dry ingredients (flour, salt, baking powder, nutmeg and salt) in a medium size mixing bowl and stir to combine.
Combine the liquid ingredients in large mixing bowl. Save the egg whites so you can beat them separately.
With electric mixer using whisk attachment (or hand whisk), beat the eggs whites until they form soft peaks. Do not overwork or the egg whites will break down.
Add dry ingredients to ricotta mixture and lightly combine, add egg whites and fold into your batter.
