Tomatoes Benedict

Ingredients

  • 6 English Muffins
  • 1 dozen Eggs
  • 8 Fresh Roma Tomatoes
  • 2 cups Shredded Cheddar Cheese
  • 3/4 cup Mayonnaise
  • 2 teaspoons Dried Basil

  1. Dice tomatoes. Combine with shredded cheddar, mayonnaise and basil. Pour mixture into a pie plate and bake at 350 degrees for about 20 minutes, or until golden brown and bubbly.
  2. Approximately 5 minutes before tomato dish is done, poach the 12 eggs and toast the English Muffins
  3. Prepare 6 plates. Place two toasted muffin halves on each plate. Top each half with a generous tablespoon of the tomato mixture. Place a poached egg on top. Garnish with chopped chives or parsley.
