Ackee and Salt Fish/ Pancakes with Tropical Fruit
Ackee and Salt Fish is Jamaica's National dish. Often described as resembling scrambled eggs, this yellow fruit, when boiled, is sautéed with cod fish, seasoned to the right balance and served with a variety of accompaniments. Jamaica, land we love! For a Jamaican twist on an American favourite, say "Good morning, Honey!". We top our Pancakes with a dollop of tropical fruit salad, a sprinkle of wheat germ and a drizzle of pure Jamaican honey. Mornings don't get better than this!
