    Ragù d’ anatra e melanzane
    soffrigere in olio cipolla carota e sedano tritati finemente unire il macinato ,far cuocere qualche minuto senza seccare,bagnare col brandy. Una volta evaporato unire la salsa di pomodoro,il brodo abbondante e le melanzane tagliate a cubetti piuttosto grossi,far cuocere per un’ ora e mezza, aggiungendo altro brodo se necessario ricordandosi di unireun piccolo trito di aglio e rosmarino a metà cottura Usare la salsa per condire pappardelle o tagliatelle all’ uovo, spolverizzandole al momento del servizio con una manciata di prezzemolo
