Artichoke - 3 Cheese Casserole

Ingredienti

  • 10 Eggs
  • 1/2 cup Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Basil
  • 16 oz Cottage Cheese
  • 2 cups Monterey Jack Cheese, shredded
  • 2 cups Cheddar Cheese, shredded
  • 2 tablespoons Vegetable Oil
  • 1/2 cup Onion, chopped
  • 13 oz Artichoke Hearts, drained and chopped
  • To taste Paprika

  1. Preheat oven to 325 degrees. Combine eggs, flour, baking powder, seasonings and basil, and blend well.
  2. Stir in cottage cheese and other cheeses. Set aside.
  3. Heat vegetable oil in skillet. Saute onions, then add artichokes and toss with onions. Add artichoke mixture to egg mixture, stirring to blend well.
  4. Pour into greased 9 x 13 casserole dish. Sprinkle with paprika. Bake uncovered about 1 hour, until set and golden brown.
