Pimento Cheese Bites: Appetizer-Snack

Servings: 15

Prep time:30 minutes

Ingredients:

  • 2 cups Baking Mix

  • 1 1/2 cups Pimento Cheese (homemade or store-bought)

Step 1:

Preheat oven to 350 degrees F.

Step 2:

Stir together baking mix and pimento cheese with a wooden spoon or spatula until a soft dough forms.

Step 3:

Roll dough into 1-inch balls and place on an ungreased cookie sheet.

Step 4:

Bake at 350 degrees for 8 to 10 minutes or until light golden brown. Cool on cookie sheet for 5 minutes, then transfer to a cooling rack to cool to room temperature.

Step 5:

These pimento cheese bites can be made ahead and frozen until needed. Allow to thaw to room temperature before serving. You can make many versions of this recipe by adding chopped pecans, chives or scallions, cayenne pepper or Old Bay seasoning, finely-chopped ham or seafood. The possibilites are endless!
