Sunrise Pot Pie: Breakfast-Brunch
1 cup cooked pork sausage, crumbled
1 Idaho potato, peeled and diced
1 cup prepared white gravy
Salt and pepper
1 Sheet puff pastry, thawed
Egg wash (1 beaten egg with 1 Tbsp. water)
Preheat oven to 375 degrees. Spray 6 ramekins with cooking spray. Warm sausage in skillet over medium heat and set aside.
Saute potatoes in the same skillet as the sausage for 10 to 12 minutes, or until potatoes are tender and slightly golden. Mix together sausage, potatoes and gravy. Divide into ramekins.
In a separate heated skillet, scramble until set but still very moist. Salt and pepper the eggs to taste. Layer the eggs on top of the sausage mixture in ramekins.
Roll out puff pastry and cut into 6 squares larger than the diameter of each ramekin. Place pastry on top of ramekins and brush with egg wash.
Place on cookie sheet and bake for 30 minutes or until pastry is golden brown. Enjoy!
