Hawaiian Pickled Mango: Appetizer-Snack

Ingredients:

  • 25-30 Mangoes (almost ripe)

  • 1 cup Vinegar (white)

  • 2 1/4 cup Sugar

  • 4 tablespoons Hawaiian Rock Salt

  • 4 oz Li Hing Mui

  • 1 Gallon Bottle

Step 1:

Peel and cut mangoes into 1/8" if seed is soft enough to cut through. Otherwise, slice off the meat into bite size pieces.

Step 2:

Fill the one gallon container with sliced mangoes and add above ingredients.

Step 3:

Shake to mix it up and let it stand for an hour or two.

Step 4:

Chill (optional)
