Ingredienti

  • 1 Large Portabella Mushroom cap
  • 1 poached egg - large
  • 6 Baby spinach leaves
  • 1 tablespoon Olive oil
  • 2 tablespoons Hollandaise sauce

  1. Scrape out gills and stem from mushroom Brown in olive oil and then drain on paper towel
  2. Cover inside of mushroom with spinach leaves
  3. Poach egg and then put into mushroom cap Put a dollop of hollandaise on top
  4. Serve with sliced cherry tomatoes and asparagus tips and Jimmy Dean sausage For color, I added some cheddar cheese squares Serve immediately
