Eggs bennedict: Breakfast-Brunch

Ingredients:

  • 4 eggs

  • 3 egg yolks

  • 4 thick slices grilled focaccia artisian bread

  • 2 tblsp lemon

  • 2 tblsp hot water

  • 1 stick of sweet unsalted butter-melted & hot

  • salt & pepper

  • cayenne or favorite hot sauce

  • paprika

  • chives

  • sliced lemon rounds

  • 4 slices Canadian Bacon

Step 1:

Poach 4 eggs. Grill Canadian bacon and bread.

Step 2:

Hollandise sauce In a blender put 3 egg yolks,hot water, lemon juice. Blend until frothy about 1-2 minutes. Drizzle in hot butter slowly as you blend. Add hot sauce to taste.

Step 3:

Assemble. Bread, bacon, eggs and sauce. Add salt, pepper and paprika.

Step 4:

Garnish with chives on top and lemon slices around your plate.
