Pumpkin Walnut Raisin Bread: Bread

Ingredients:

  • 1 15 oz. Pumpkin puree

  • 4 eggs

  • 1 cup vegetable oil

  • 2/3 cups water

  • 3 cups white sugar

  • 3 1/2 cups flour

  • 1/2 teaspoons salt

  • 1 teaspoon ground cinnamon

  • 1 teaspoon ground nutmeg

  • 1/2 teaspoon ground cloves

  • 1/2 teaspoon ground ginger

  • 2 teaspoons baking soda

  • 1 1/2 cups chopped walnuts

  • 1 1/2 cups Raisins

Step 1:

Preheat oven to 350 degrees and prepare 12 mini loaf pans with cooking spray

Step 2:

In a large bowl mix the pummpkin, eggs, oil, water and sugar until well blended In a separate bowl whisk the flour, baking soda, salt and spices together

Step 3:

Stir the dry ingredients into the pumpkin mixture and mix until just blended. Fold in the walnuts and raisins.

Step 4:

Baken for about 30 to 40 minutes. Insert a toothpick int he middle of a loaf and if comes out clean, removed loaves from the oven and let set for 10 to 15 minutes before removing from the pans.
