Oven Baked Pancake with Berries: Breakfast-Brunch

Prep time:10 minutes

Ingredients:

  • 2 tablespoons butter

  • 2 eggs

  • 1/2 cup all-purpose flour

  • 1/2 cup milk

  • 1/4 teaspoon salt

  • 1 cup assorted fresh berries

  • powdered sugar

Step 1:

Heat oven to 400 degrees. In 9" pie plate, melt butter in oven. Brush butter over bottom and side of pie plate.

Step 2:

In medium bow, beat eggs, slightly with wire whisk. Beat in flour, milk, and salt just until mixed (do not over beat). Pour into hot pie plate.

Step 3:

Bake 25-30 minutes or until puffy and deep golden brown. Serve pancake immediately topped with berries. Sprinkle with powdered sugar.
