Crunchy Granola: Breakfast-Brunch

4 cups Whole-grain oats
1 1/2 cups almonds or pecans
1/2 cup brown sugar, packed
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 cup oil
1/2 cup maple syrup or honey
1/2 teaspoon vanilla
1 1/2 cups raisins and/or dried cranberries
1/2 cup coconut
Preheat oven to 300.
In ziplock plastic bag mix oats, almonds, brown sugar, salt and cinnamon.
Warm oil and syrup or honey. Whisk in vanilla. Pour liquid over oat mixture. Stir gently.
Spread granola in 15x10x1 pan, lined with parchment paper. Bake 40 minutes, stirring every 10 minutes. Transfer pan to rack, cool completely. Stir in raisins and cranberries.
Seal granola in airtight container. Store at room temperature for 1 week or in freezer for 3 months.
