Elegant Eggs: Breakfast-Brunch

Servings: 8

Prep time:30 minutes

Ingredients:

  • 1-1/2 Dozen Eggs - beaten

  • 1/2 cup Water

  • 1/2 cup Butter or Margarine

  • 1/2 cup Onion - chopped

  • 1 lb Bacon - cooked crisp

  • 1 can Cream of Mushroom Soup

  • 1 1/2 cup Cheddar Cheese - Shredded

  • 1 cup Sour Cream

  • 4 oz can Mushrooms - drained

Step 1:

Preheat oven to 250 degrees. Coat 9 x 13 pan with Cooking Spray. Cook bacon until crisp, then when cool crumble.

Step 2:

Saute onion in butter or margariine until soft. Add eggs (beaten with water) and cook until eggs are set.

Step 3:

Transfer eggs to 9 x 13 pan, sprinkle with crumbled bacon and cheese.

Step 4:

Mix soup, mushrooms and sour cream together and spread over the eggs, bacon, and cheese.

Step 5:

Bake about 30 minutes or unttil heated through.
