Active dry yeast
Combine water, yeast and sugar in mixing bowl and set aside until foamy on top, about 5 min.
Add 1 C flour, the Semolina, the olive oil and salt. Mix with paddle attachment on mixer on low speed for 2 min.
Change to dough hook and mix in remaining flour 1/4 C. at a time.
Continue mixing on 2nd speed for about 6 min. Dough should be slightly sticky but the bowl will be clean.
Turn on to floured surface and knead about 2 min. until smooth and elastic.
Coat a large bowl with olive oil, place dough in bowl and then turn to coat. Cover with plastic wrap and let rise in warm place for 1- 1.5 hours.
Punch the dough down and divide into 2 balls. Use or wrap for storage.
