Bald Mountain Toasted Coconut Pie: Dessert

Prep time:15 min.

Ingredients:

  • 4 extra large or jumbo eggs (beaten)

  • 2 1/4 cups sugar

  • 3/4 cup butter (melted)

  • 2 tablespoons lemon juice

  • 2 teaspoons vanilla

  • 2 cups coconut (fresh, unsweetened)

  • 9-inch unbaked extra deep pastry shell

  • Whipped cream for garnish

  • Toasted coconut for garnish

Step 1:

Preheat oven to 350 degrees. In food processor thoroughly combine eggs, sugar, butter, lemon juice and vanilla.

Step 2:

Stir in coconut and pour into pie shell.

Step 3:

Bake for 50-55 minutes or until knife inserted in middle comes out clean and pie is set.

Step 4:

Cool and then chill.

Step 5:

To serve garnish with whipped cream and toasted coconut.
