Kelley's famous Banana Bread: Bread

Ingredients:

  • 2 cup sugar

  • 1/4 cup butter, softened

  • 2 eggs

  • 2 ripe bananas

  • 1/2 teaspoon almond extract

  • 1/2 teaspoon vanilla extract

  • 2 cups sour cream

  • 3 cups flour

  • 2 teaspoon baking soda

  • dash salt

  • 1/3 cup brown sugar

  • 2 teaspoons cinnamon

Step 1:

Preheat oven to 350°. Butter and flour 6 small aluminum loaf pans and place on a large cookie tray. Be sure to position them so air can pass freely or they will not cook evenly.

Step 2:

In a large bowl blend sugar, butter and eggs. Add mashed banana, extracts and sour cream.

Step 3:

Sift flour, baking soda and salt into batter. Stir into banana mixture taking care not to over mix or bread will be tough.

Step 4:

Combine brown sugar and cinnamon. Spoon half the batter into loaf pans and sprinkle half of the brown sugar/cinnamon mixture on batter. Continue to fill loaf pans with remaining batter. Sprinkle the remaining half of the brown sugar/cinnamon mix on top. *be sure pans are no more than 2/3 full or they will spill over.

Step 5:

Bake for 35-40 minutes. If using larger pans, it could take an hour to bake. Freezes well. I place in oven for about 5 minutes before serving to reheat bread. Trust me, this one's a winner.
