Strawberry Bread with Strawberry Butter: Bread

Ingredients:

  • 3 cups flour

  • 2 cups sugar

  • 1 teaspoon baking soda

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • 4 eggs, beaten

  • 1/4 cup vegetable oil

  • 1/4 cup pecans

  • 2 10-oz packages strawberries, thawed and drained

  • 1/2 cup butter (1 stick), softened

  • 1 10-ox package strawberries, thawed and drained

  • 3 tablespoons powdered sugar

Step 1:

For bread: Mix flour, sugar, soda, baking powder, and salt. Make a well in the center. Mix beaten eggs, vegetable oil, pecans, and 2 packages drained strawberreis. Pour strawberry mixture into dry ingredients and blend just to moisten.

Step 2:

Pour batter into 2 greased (or sprayed) loaf pans and bake at 350 degrees for 1 hour. Remove from pans after 5 minutes and cool on racks or serve warm.

Step 3:

For strawberry butter: Mix softened butter, drained strawberries and powdered sugar together. Beat with a wire whisk until fully blended. Serve at room temperature.
