Orange, Walnut & Rosemary Muffins: Breakfast-Brunch

Ingredients:

  • 2 cup All Purpose Flour

  • 1 tablespoon Baking Powder

  • 1/2 teaspoon Baking Soda

  • 1/8 teaspoon Sea Salt

  • 1/2 cup Sugar

  • 1/2 cup Walnut Pieces

  • 2 Eggs

  • 1 cup Plain Yogurt

  • 6 tablespoons Olive Oil

  • 1/4 cup Orange Rind - Finely Grated

  • 1 tablespoon Rosemary Leaves - Finely Chopped

Step 1:

Preheat the oven to 400 degrees. Grease 12 cup muffin pan or use paper liners. Sift together the flour, baking powder, baking soda, and salt into a large bowl. Stir in the sugar & walnuts.

Step 2:

Lightly beat the eggs in a large bowl then beat in the yogert, oil, orange rind, and chopped rosemary leaves. Make a well in the center of the dry ingredients and pour in the beaten liquid ingredients. Stir gently until just combined. Do not overmix.

Step 3:

Spoon the batter into the prepared muffin pan. Bake in the preheated oven for about 20 minutes, until well risen and golden brown.

Step 4:

Let muffins cool in the pan for 5 minutes and serve with warm.
