Feta Eggs: Breakfast-Brunch

Ingredients:

  • 6 oz Tomato Basil Feta Cheese Crumbles

  • 7 Grape Tomatoes halved

  • 7 Eggs

  • 1 3/4 cups Milk or Half and Half

  • 4 oz Cheddar Cheese Grated

Step 1:

Spray a square glass baking dish with Pam. Pre-heat oven to 250 – yes, that is very low. Spread the feta cheese over the bottom of the baking dish. Arrange the tomatoes in a pleasing pattern. Add the eggs and milk to an electric mixing bowl and beat for 2 minutes starting a low and moving towards medium.

Step 2:

The eggs will be very light yellow and somewhat frothy. Sprinkle the cheddar cheese over the tomatoes and feta. Pour the egg mixture over a spoon and into the baking dish. The spoon helps to keep the tomatoes in place while you are pouring. Bake for about 1 hour. You can also garnish the Feta Eggs with black olives.
