Eggs Florentine: Breakfast-Brunch

Ingredients:

  • 1 Bag Fresh Spinach

  • 3 oz Cream Cheese

  • 1/4 teaspoon nutmeg

  • 1 1/2 cup Shredded Cheddar

  • 6 eggs

  • Parmesan cheese, grated

  • 3 English muffins

Step 1:

Preheat oven to 350 degrees. In a microwave safe bowl, add chopped spinach, cream cheese and nutmeg. Microwave on high for 2 minutes.

Step 2:

Add cheddar and mix well.

Step 3:

Grease 6 medium-sized ramekins and divided spinach mixture between them.

Step 4:

Crack an egg over top of each individual ramekin, and sprinkle with grated parmesan, so egg is covered.

Step 5:

Bake at 350 degrees for 15-20 minutes, or until egg is set on top of each ramekin. Remove from oven and with a spoon, carefully remove contents of each ramekin and put on top of half of a toasted English muffin. Ready to serve! :-)
