My Favorite Recipe: Breakfast-Brunch
2 tablespoons Butter
1/4 cup Chopped Onion
3/4 cup Sliced Mushrooms
3/4 cup Sour Cream
1/4 teaspoon Pepper
1 teaspoon Dried Dill Weed
4 tablespoons Parmesan Cheese, grated
Preheat oven to 500 degrees. In a large skillet, over medium heat, melt the butter. Add onions and mushrooms; saute until onions are limp. Divide this mixture evenly among 4 greased ramekins.
In a small bowl, combine sour cream, ground pepper and dill weed. Divide mixture evenly among the ramekins, then smooth it into a circle to create a depression in the middle of each dish.
Break 2 eggs into each depression. Top each with 1 tablespoon of the grated cheese. Bake until eggs are set (7-10 minutes). Serves 4.
