Shrimp, Sundried Tomato, Spinach & Red Pepper Pasta: Main Dish

Servings: 4

Prep time:15 minutes

Ingredients:

  • 2 dozen Frozen or fresh Shrimp with tail off

  • 2 Red peppers sliced into stips & cut into 1/2 inch size

  • 1 Package of triple washed Spinach

  • 1 Package of dried sun dried tomatoes

  • 3 Garlic Cloves Minced

  • 1 1/2 tablespoon Fresh Lemon Juice

  • 1 tablespoon Olive Oil

  • 1 lb Penne

Step 1:

Heat oil and garlic (1 tbsp)over low heat

Step 2:

Add peppers, turn up heat to medium.

Step 3:

After 2 minutes add sundried tomatoes (cut into small pieces and rehydrate)and saute approximately 5 minutes or until almost tender

Step 4:

Add spinach, lemon juice and remaining garlic and saute until spinach is completely wilted.

Step 5:

Add shrimp and cook for 3 minutes and toss with cooked penne
