2/3 cup fresh strawberries, blueberries, blackberries or peaches, peeled
2 tablespoon sour cream
2 tablespoon butter
Blend flour, milk and eggs in a medium size bowl
Cut butter into 4-6 smaller size pieces and place in an oven proof quart size casserole dish. place the casserole dish into a cold over and set oven temperature to 450 degrees. Once the butter has melted, open the oven door and pour the batter into the hot casserole dish. Bake for 19-22 minutes until puffed and golden brown.
While the pancake is cooking, cut the fresh strawberries or the fresh peaches into bite size pieces and set aside.
Remove the pancake from the oven, cut in two placing half on each of 2 plates. Top each half with a mix of fresh berries or the fresh peaches. Dollop with the sour cream and serve.
