Hash Brown Casserole: Breakfast-Brunch

Ingredients:

  • 1 medium onion chopped

  • 1 tablespoon oil

  • 3/4 cup sweet bell pepper (green and/or red pepper)

  • Packet of frozen country hash brown potatoes (about 27 ozs)

  • 1 can mushroom soup (about 10 ozs)

  • 1 1/2 cups milk

  • 1 1/2 cups grated cheese

  • Salt and pepper to taste

  • Dash of tobasco (optional)

Step 1:

Saute onion and pepper in oil until tender. Add salt and pepper to taste. Add frozen potatoes and can of condensed mushroom soup. Add milk and shredded cheese.

Step 2:

Stir everything together well. Put in a greased casserole dish. Bake at 350 degrees for 45 minutes to one hour.
