One loaf cinnamon raisin bread at least day old
7 fresh eggs
1/2 cup Vt Maple Syrup
1/2 stick butter
Slice whole loaf (including crusts) into small cubes
Place 1/2 of cubed bread into buttered 9-10 inch pie pan, sprinkle liberally with cinnamon, then add remaining bread and again sprinkle liberally with cinnamon.
Beat eggs with 2 1/2 cups milk and add maple syrup and the rest of the butter (melted). Pour mixture over the bread & cinnamon, cover with plastic wrap and place in refrigerator at least overnight.
Take the strata out of the refrigerator at for least 20 minutes then uncover and bake in preheated oven at 325 for approximately 40-45 minutes. It will puff up when nearly done, but be sure to test with knife for doneness. Remove from oven and let set about 10minutes before slicing and serving. We drizzle English Custard and Maple Syrup over the top when plating for our guests.
