Jessica's Quiche: Breakfast-Brunch

Ingredients:

  • 6 Eggs

  • 1 teaspoon Sugar

  • 1 teaspoons Salt

  • 1 teaspoon Baking Powder

  • 1 lb Monterrey Jack Cheese (block)

  • 2 cups Cottage Cheese

  • 1 cup Milk

  • 1/2 cup Flour

  • 1/2 cup Butter (or one stick)

  • 2 Deep dish frozen pie shells

Step 1:

In a small pan melt the butter and add flour until it's well blended. It almost looks like moist dough. Leave it to the side

Step 2:

In a large bowl beat eggs thoroughly then add, sugar, salt, baking powder, cottage cheese, and grated Monterrey Jack cheese.

Step 3:

Add the dough mix and milk to the blend. Do not over mix. pour into the frozen pie shells. bake at 375 for 45 min or until the top is brown.

Step 4:

You can add anything to this recipe like ham, green onions, spinach, mushrooms, etc. I keep it plain for guest who don't like the "good" stuff. But it works!
