Streusel Topped Blueberry Cake

Ingredienti

  • 3 tablespoons shortening
  • 1 cup sugar
  • 1 egg
  • 1 3/4 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 1/2 cups fresh blueberries

  1. Cream shortening with sugar; beat in egg. Sift flour, baking powder and salt together in separate bowl. Add dry ingredients to shortening/sugar mixture, alternating with milk.
  2. Springkle washed, drained blueberries with a little flour to keep them from sinking, and stir into batter. Pour batter into greased and lightly floured pan, 11 x 7 inches in size.
  3. Mix together 1/2 cup flour, 1/2 cup sugar, 2 tablespoons soft margarine, and 1 teaspoon cinnamon until crumbly to make streusel topping.
  4. Sprinkle batter with streusel topping.
  5. Bake in 350 degree oven until cake test dones, about 40 minutes.
