  • 2 cups flour
  • 1 cup quick or old fashioned oats, uncooked
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup softened butter or margarine
  • 1 cup firmly packed brown sugar
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin
  • 1 cup semi-sweet chocolate chips
  • 1 can sour cream frosting

  1. Preheat oven to 350.
  2. Combine flour, oats, baking soda, cinnamon and salt. In a seperate bowl, cream butter and gradually add sugars beating until light and fluffy. Add egg and vanilla- mix well.
  3. Alternate additions of d ry ingredients and pumpkin mixing well after each addition. Stir in chips.
  4. Drop 1/4 c dough onto lightly greased cookie sheet for each cookie. Bake 20 to 25 minutes until cookies are firm and lightly browned. Remove from cookie sheet and cool on racks.
  5. Decorate using icing and sprinkles or colored sugar dependent upon holiday to be used. Raisins can be subsituted for chips. Sit down next to crackling pine fireplace with your feet up and a nice glass of cold milk or a cup of hot mint tea and remember the moments you shared with your loved one(s) at Pueblo Bonito Bed & Breakfast Inn!
