Fresh Cherry Muffins: Bread

Ingredients:

  • 1/2 cup unsalted butter, softened

  • 2 eggs

  • 1 1/2 cups sugar

  • 3 cups flour

  • 2 1/2 teaspoons baking powder

  • 1/2 teaspoons salt

  • pinch baking soda

  • 1/2 teaspoon vanilla extract

  • 1/2 teaspoon almond extract

  • 1 cup milk

  • 2 cups fresh cherries, pitted and cut in half

Step 1:

Preheat oven to 400 degrees.

Step 2:

Cream butter and sugar together in a large bowl. Add eggs, mixing well. In a medium bowl combine flour, baking powder, salt and soda. Add extracts to milk. Alternately add milk then flour to creamed mixture and mix well. Fold cherries into batter. (Save a few of the cherries for the last bit of batter, there never seem to be any left.)

Step 3:

Spoon into paper lined muffin cups and bake for 15 to 20 minutes or until golden. If you like sprinkle a little raw sugar on top prior to baking. Yield: 20 muffins
