Birk's Baked Eggs: Breakfast-Brunch

Prep time:90 min.

Ingredients:

  • 1 dozen eggs-large

  • 2 cups cottage cheese

  • 2 cups grated cheese

  • 1/4 cup all purpose flour

  • 1 teaspoon baking powder

Step 1:

Put eggs in large bowl and beat (wire whip or mixer). Add in flour, baking powder and cottage cheese and beat. Add in grated cheese and mix thoroughly.

Step 2:

Pour ingredients in greased or sprayed large glass dish (9 x 13) and place in oven set at about 325 for 45-60 minutes. Remove and serve.

Step 3:

We use individual pyrex one cup serving dishes (#328) Make sure you get the entire inside sprayed before putting in the mixture. Keep an eye on them, you want to lightly brown the top, so you may want to increase the temp 25 degrees prior to removing from the oven.

Step 4:

This is a VERY forgiving recipe. We basically just guestimate the amounts now. Also, this is a great base to add things. Onions, garlis, mushrooms, sausage, peppers, salsa, basically anything you think would be good can go into the mix. -Rick
