Heather's Pumpkin Roll: Dessert

Ingredients:

  • 4 Whole Eggs

  • 1 box Aspen Mulling Spice

  • 3/4 cup All-purpose flour

  • 2/3 cup pumpkin puree

  • 1 teaspoon baking powder

  • 1/2 teaspoon fine sea salt

  • 8 oz cream cheese

  • 4 tablespoons butter

  • 1 cup confectioners sugar

  • 1/2 teaspoon pure vanilla extract

Step 1:

soften cream cheese & butter for later use. preheat oven to 350 degrees

Step 2:

beat 4 eggs with Aspen mulling spice for 5 minutes on high with electric mixer

Step 3:

gradually mix in pumpkin puree gradually mix in flour, salt & baking powder

Step 4:

line 1/2 sheet pan with aluminum foil so that foil overhangs edges, but fits snugly around corners, spray with non-stick pan spray. Pour mixture. Bake for 15 minutes at 350 degrees. Use aluminum foil to roll cake & place in refrigerator to cool for at least 45 minutes

Step 5:

mix softened butter, cream cheese, confectioner's sugar & vanilla extract. Unroll chilled cake, spread with icing mixture, re-roll cake & refrigerate until serving.
