2 1/4 cups Flour (all-purpose)
1 tablespoon Baking Powder
3/4 teaspoon Ground Cinnamon
1/2 teaspoon Salt
1/8 teaspoon Ground Cloves
1 Large Egg
1/2 cup Granulated Sugar
1/4 cup Vegetable Oil
1/2 teaspoon Real Vanilla Extract
1 cup Sweetened Applesauce
2 Jonathan or Rome Beauty Apples (peeled, cored, & diced into 1/4" pieces - approx. 2 cups)
1/4 cup Butter (unsalted - room temp.)
1/2 cup Chopped Pecans or Walnuts
1/3 cup Light Brown Sugar
1/3 cup Flour (all-purpose)
Preheat oven to 375 degrees.
Coat a standard 12-muffin pan with cooking oil spray.
Ingredient list down to diced apples is for muffins. Remaining ingredients are for struesel topping.
Dry Ingredients: In large mixing bowl, mix flour baking powder, cinnamon, salt, and cloves.
Wet Ingredients: In medium mixing bowl, whisk egg, sugar, oil, and vanilla. Stir in applesauce.
Combining Ingredients: Make a well in center of dry ingredients. Pour wet ingredients into the well, and stir only until dry ingredients are moistened. Fold in diced apples. Divide among the 12 muffin cups (approx. 1/3 cup each).
Mix butter, nuts, sugar, and flour until crumbly.
Sprinkle over tops of muffins before baking.
Bake in 375 degree oven until toothpick comes out clean when inserted into centers of muffins (approx. 23-25 minutes). Remove pan from oven, and let cool for 5 minutes. Remove muffins from pan, and place on wire cooling rack. Let cool to room temperature, and serve.
