1/4 cup butter, softened
2 tablespoons granulated sugar
4 very ripe pears
Vermont maple syrup
Rub the butter over the bottom of an 8x8 baking dish, coating well. Leave any remaining butter in the dish. Dust the buttered dish with the granulated sugar. Peel the pears. Trim a sliver off the bottom of each pear so that it stands upright. Place in the prepared dish.
Drizzle the tops of the pears with maple syrup. Sprinkle with brown sugar and allspice. Add the desired amount of raisins to the bottom of the dish.
Bake at 325 degrees for 15 minutes. The juices from the pears will mix with the butter and sugars to create a caramel coating.
Serve the pears on individual dishes. Spoon the juices and raisins over each pear and top with a splash of heavy cream. Garnish with fresh pansies.
