Wheat-Free Crackers: Appetizer-Snack
Prep time:1-2 hours
1 cup Garbanzo Bean (or other non-wheat) Flour
1/2 cup Oatmeal
1 teaspoon Salt
4 tablespoons Butter
4 oz Cheddar Cheese, grated
2 oz Asiago or Parmesan Cheese, grated
1 Egg Yolk
2 tablespoons Cold Water
1/3 to 1/2 cup Chives, chopped
Process the first four ingredients in a food processor until it looks like coarse cornmeal. (about 5 seconds)
Add in the cheeses & pulse until just mixed. Add the egg yolk, water & chives, and pulse until the dough comes together.
Form dough into logs, and refrigerate for an hour*. Then cut it into very thin slices and bake at 375 degrees F. for 15 to 20 minutes.
*If you’re in a big hurry, you can roll out the freshly made dough very thin, stab it liberally with a fork, cut cracker shapes and bake as usual.
