Creamy Pumpkin Soup Sunset Hill House: Soup

Servings: 8

Prep time:20 minutes

Ingredients:

  • 1 large can pumpkin puree

  • 1 stick butter

  • 1 cup diced onion

  • 1 cup diced celery

  • 1 cup dry sherry

  • 2 quarts chicken stock or broth

  • 3 cups heavy cream

  • 1/2 cup all purpose flour

  • 1/4 cup New Hampshire Maple Syrup (REAL maple syrup)

  • to taste salt and pepper

Step 1:

Melt butter in a 4 quart soup pot. Add onion and celery and saute over medium heat until onion is translucent. Add flour and stir for about 1 minute, until flour is cooked.

Step 2:

Stir in sherry and chicken stock until smooth. Bring to boil briefly, add pumpkin, maple syrup, salt and pepper, blend and drop to a simmer.

Step 3:

Immediately before serving, add cream, stir, and serve.

Step 4:

This is lovely garnished with fresh chives and some creme fraiche or sour cream.
