Blueberry Stuffed French Toast: Breakfast-Brunch
8 oz Cream Cheese
1/2 cup Chopped walnuts (Optional)
1 teaspoon Vanilla Extract
Fresh or 1 Can Blueberries (Drained)
Loaf unsliced Vienna Bread
4 Eggs (Beaten)
dash Ground Nutmeg
3/4 cup Heavy Cream or Half and Half
Garnish with sliced strawberries, bananas, and blueberries
Using an electric knife cut the bread into slices.
Place cream cheese in a microwave safe bowl and microwave slightly to soften. Mix the softened cream cheese with walnuts, vanilla and blueberries in the bowl. Spread onto a piece of bread to make a sandwich.
In a separate bowl, mix the ingredients for the batter.
Dip each sandwich into the batter. Place on a preheated griddle pan. Flip when golden brown. The filling will heat as you grill the sandwich.
Cut each sandwich into forths. Gently spread each section apart. Place garnish over french toast and on plate's edge. Sprinkle with powdered sugar and serve with real NH maple syrup.
