Blueberry Stuffed French Toast: Breakfast-Brunch

Ingredients:

  • 8 oz Cream Cheese

  • 1/2 cup Chopped walnuts (Optional)

  • 1 teaspoon Vanilla Extract

  • Fresh or 1 Can Blueberries (Drained)

  • Loaf unsliced Vienna Bread

  • 4 Eggs (Beaten)

  • dash Ground Nutmeg

  • 3/4 cup Heavy Cream or Half and Half

  • Garnish with sliced strawberries, bananas, and blueberries

Step 1:

Using an electric knife cut the bread into slices.

Step 2:

Place cream cheese in a microwave safe bowl and microwave slightly to soften. Mix the softened cream cheese with walnuts, vanilla and blueberries in the bowl. Spread onto a piece of bread to make a sandwich.

Step 3:

In a separate bowl, mix the ingredients for the batter.

Step 4:

Dip each sandwich into the batter. Place on a preheated griddle pan. Flip when golden brown. The filling will heat as you grill the sandwich.

Step 5:

Cut each sandwich into forths. Gently spread each section apart. Place garnish over french toast and on plate's edge. Sprinkle with powdered sugar and serve with real NH maple syrup.
