Tomato Basil Delight

Ingredienti

  • 1 tablespoon Butter
  • 1 tablespoon canola Oil
  • 2 cups sliced onion
  • 2 cups sliced potato
  • 1/8 teaspoon salt
  • 2 tablespoons water
  • 10 large eggs
  • 1/2 cup mayonaise
  • 2 tablespoons flour
  • 1 cup panko bread crumbs
  • 3 tablespoons chopped basil
  • 3 roma tomatoes

  1. Melt butter and oil in frying pan on medium heat. Add potatoes and onion and cook 5-10 minutes until softened. Cool slightly and spread in 1- x 15-inch pan.
  2. Whisk eggs, mayonnaise, and flour in medium bowl. Pour over potato/onion mixture.
  3. Sprinkle with breadcrumbs and chopped basil. Layer tomato slices on top (I like to put a slice on top of each serving piece) and bake for about 30 minutes until almost set.
  4. Layer on swiss cheese and bake another 15 minutes. Let sit about 10 minutes and cut into 12 servings. Great with our own homegrown tomatoes and basil!
