Eleanor's Casserole: Breakfast-Brunch

Prep time:30 minutes

Ingredients:

  • 1 can Crescent rolls

  • 1 frozen tube ground pork sausage

  • 1 dozen eggs

  • 2 cups Mozzarella cheese, grated

  • dash salt

  • dash milk

Step 1:

Spray cooking spray in a 9x12 glass baking dish

Step 2:

Spread Crescent Rolls along the bottom, pressing the seams

Step 3:

Saute the sausage (may be eliminated with equally satisfying results), drain, and spread evenly over the Crescent Roll base

Step 4:

Beat eggs (can be increased to 18 eggs easily), add a splash of milk and salt. An electric hand mixer helps. Pour into baking dish.

Step 5:

Sprinkle mozzarella cheese liberally to cover. Bake at 350 degrees for approximately 20 minutes, or until the center has risen and an inserted knife comes out cleanly.
