Jean-Yves (in charge of the kitchen) and Nicole (in charge of the garden) have truly greatly impressed us with their hidden paradise (the entrance to the property can be easily missed). Of course, non of it is the result of luck and most of it can be attributed to a lot of work, experience and great taste. Nicole, for one, spends most of her time laboring in the "potager" where most of the produce is grown organically. The same applies to the wine that Jean-Yves serves you generously, claiming that its organic properties will protect you from any allergic reactions commonly experienced with chemically treated mass-produced wines. Jean-Yves's past career as a restaurateur also gives him more than adequate credentials for cooking the meals expected to comply with the "tables d'hotes" denomination. His 6-course dinner demonstrated his attention to detail and dedication to healthy cooking. His perfectly cooked cod and his pistachio nut ice-cream on a raspberry coulis made the top of my list though his sausage and poached eggs were also delectable. Beyond the fresh produce that went into Jean-Yves' receipes, Nicole also scored a few points the next morning with her 12 varieties of organic jam.
