Zucchini Carrot Coconut Macadamia Bread

Ingrédients

  • 1 1/2 cups White Flour
  • 1 1/2 cups Whole Wheat Flour
  • 1 teaspoon salt
  • 1 teaspoon Baking Soda
  • 1 teaspoon Baking Powder
  • 3 teaspoons Cinnamon
  • 3 Eggs
  • 1 cup Vegetable Oil
  • 2 1/4 cups Sugar
  • 3 teaspoons Vanilla
  • 1 cup Carrot, grated
  • 1 cup Zucchini, grated
  • 1 cup Macadamia Nuts
  • 1 cup Coconut

  1. Pre-Heat Oven to 325 degrees. Whisk flour, salt, soda, powder and cinnamon in small bowl.
  2. Whisk egg, oil, sugar and vanilla in large bowl.
  3. Fold dry ingredients into egg mixture, add carrot, zucchini, macadamia nuts and coconut. Mix well.
  4. Seperate batter evenly into 2 greased loaf pans. Bake for 50-60 minutes, checking loaves with toothpick.
  5. Cool 10 minutes and Enjoy!
