Seaside Eggs

Ingrédients

  • 6 Eggs
  • 1 teaspoon French Onions
  • 1 teaspoon Fresh Parsley
  • 8 Slices Crusty Bread of choice
  • Cream Cheese
  • Smoked Salomon or favorite cooked seafood.
  • Milk or cream, knob of butter
  • Capers

  1. Mix Eggs, Finely chopped Parsley and finely chopped French onions. Add half and half or milk. Beat until frothy.
  2. Melt butter in pan, add eggs and cook as scrambled eggs.
  3. Toast bread slices. Smother in Cream Cheese. Top with fish of choice.
  4. Serve eggs in ramakin dish with toast slices on the side. Garnish with sprig of onion and capers.
