1 dozen egg
1 cup heavy cream
three Yukon Gold potatoes, sliced 1/8 in
1 red bell pepper, sliced in strips
one large red onion, halved and sliced
1/2 lb asperagus, ends removed, cut in half
1 & 1/2 cups grated sharp cheddar cheese
pre-heat oven to 350
beat eggs and cream together, add salt & pepper to taste
mix in 1/2 cup of fresh herbs such as oregano, chives, basil
in large greased baking dish layer the bottom of the pan with the potatoes, overlapping if necessary.
on top of potatoes layer the asparagus
of top of the asparagus layer the red pepper strips
on top of the red pepper strips, layer the onion
pour egg mixture over all of the above.
sprinkle grated cheese throughout.
Bake for 1 hour at 350
