Bacon, Broccoli, Blue Cheese Omelets: Breakfast-Brunch
1/4 cup Broccoli
1/8 cup Blue Cheese
2 strips Bacon
1 Green onion
Heat a small frying pan on medium heat and cook the bacon. Drain on a paper towel. Crumble the bacon when it's cool. Set aside.
Heat a small frying pan on medium heat and melt butter to cover the bottom of the pan. Saute the broccoli in the pan and place in a bowl. Wipe the pan with a paper towel.
Crack eggs into a bowl and use a fork to blend the eggs. Melt additional butter in the frying pan and wait for the eggs to set on the bottom (approximately 2-5 minutes).
Pour the fillings onto the eggs as they set approximately 3 minutes into cooking. Wait until eggs are cooked through.
Fold the one side of the eggs over. Place omelet on plate & serve with potatoes, fruit or toast.
