Oven Baked Whole Wheat Raspberry Pancakes

Ingrédients

  • 2 cups Whole Wheat Flour
  • 1/2 cup Natural Sugar
  • 1 1/2 teaspoons Baking Soda
  • 1 teaspoon Baking Powder
  • 2 tablespoons Canola Oil
  • 2 eggs Farm Fresh Eggs (or other eggs)
  • 1 cup Red Raspberries
  • 1 1/2 cups Lowfat Buttermilk

  1. Mix dry ingredients well add oil, eggs, and milk slowly for consistency a little thicker than to yogurt fold in raspberries
  2. Use two pie dishes-preferably stoneware, melt a small amount of butter in each and then divide batter in two. Bake at 350 degrees on middle shelf for about 30 minutes, rotate after 15 minutes
  3. Slice like pie and sprinkle a small amount of confectioner's sugar with a drizzle of maple syrup for garnish (a couple raspberries optional).
