Green Apple Omelet: Breakfast-Brunch
Prep time:15 minutes
1 Granny Smith apples
Bleu or Gorganzola cheese
Peel and slice apple. Saute in butter til soft and slightly browned.
Melt 1/2 tsp butter in two small omelet pans.
Whisk 2 eggs for each pan; add to pans.
After eggs set, add apples and crumbled cheese to 1/2 the egg mixture. Fold other 1/2 over, omelet style, and finish cooking. Serve immediately with a sprinkle of nutmeg.
